My mom always cooked a range of foods but stir fry was one of her easy go to meals. Yes, I completely realize that there are levels of stir fry and some that can be very intricate complicated and delicious. To me, realistically, stir fry is very much like a quiche, or as my grandmother would say, Thursday night mustgo (pronounced mustco).

Island Stir Fry
Description

And while typically Stir Fry is synonymous with high heat and a fast moving spoon, we have a slightly different take that will make your weeknight dinner even easier and will crank the flavor to a ten!
Ingredients
- ½ onion, sliced
- 2 tsp. vegetable oil
- 1 cup snap peas
- 1 cup carrots, slices or diced
- 1 cup baby corn
- 1 cup mushrooms, sliced
- 1 broccoli head, cut into bite sized pieces
- 1 - 2 tbsp. Kailua Seasoning Company Island Stir Fry
- 1 ½ cup chicken broth
- ¼ cup soy sauce
- 2 green onions, finely chopped
- steamed rice
- salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- In a 4-quart saucepan, heat the vegetable oil over high heat. Add the chicken and onions and let cook until the chicken is almost cooked through. About 4 minutes.
- Add the remaining ingredients to the saucepan, except the green onions and rice, and stir to combine.
- Bring to a boil. Once boiling, reduce heat to low, cover, and let cook, stirring occasionally, until the vegetables are tender, about seven minutes.
- Serve over rice using the broth as a sauce and garnish with chopped green onions.
