It is so easy, so versatile, low effort, and tastes great. It combines chicken, which most people love, potatoes, which most people also will eat, and is contains olive oil which most people can agree, is not butter.
You can modify this to make is how you life, you can put more effort to make it look pretty, or you can just throw it in the pan, pop it in the oven and call it good. Whatever you do, messing this up is near impossible, and the rate for success teeters around 100 percent.

Greek Chicken Go To Recipe
I have been cooking for a really long time. Like, a really long time. My mother enrolled me in a cooking class before I could read, which was really challenging both for me and the other kids as I could do nothing useful, like measure, and even got my first "burn" on an electric stovetop at age 5 because i was making grilled cheese and was convinced it wasn't hot. I was a very stubborn, read defiant, child and my mother finally just reached a point that I did well learning on my own, even if that meant having a raised spiral on my right hand for the better part of a week. (It's funny, my luck with element heating is really terrible, I was even able to blow a clear hole through an All Clad pan that even the company was impressed with. We switched to gas shortly after but that is another story altogether!)
So from my days of illiteracy and burning my hand as a rite of passage, I moved onto the next stage of my cooking career, Middle School and High School. This time in my life consisted of not wanting to go to school sometimes and my mother obliging because I was a good student and just needed a break sometimes. That combined with an incredible school nurse who could turn a paper cut into a near death sentence over the phone, it was good to have a day off every once in a while.
So, how would I fill my time? Cooking shows of course!
This was the beginning of Food Network's reign and Giada and Ina were there for it! I have to say, I learning a massive amount about cooking from Giada. How to cut onions, how to make pasta dishes, that Global knives are superior, and so much more. This continued into college and making Giada recipes were always easy, quick, and reliable.
Side note: You know what wasn't easy, quick,and reliable? Martha Stewart recipes. I always stayed away from those!
So at some point between middle school and college, Giada came out with a Greek chicken recipe. I made it once, and then i made it again, and again. It was hardly a recipe, just easy proportions to make some lemon chicken. I loved the simplicity of it and since then, have been making my "version" of her Greek Chicken.
The recipe below is yours to adapt to you. Use what you have! Add what you like, take ingredients out if you don't want them. The recipe is your oyster and not one to fuss over.

Greek Chicken with Lemon, Feta & Potatoes
Description
There is no way to mess this recipe up. Add more of what you love and less of what you don't. Can be made ahead a reheated with no problems. A great dish to enjoy with your family or to give away to a friend!
Ingredients
- 1 cup olive oil
- ½ cup lemon juice from fresh lemons if possible
- 1 cup chicken stock
- 3 garlic cloves, smashed
- 2 tbsp. Kosher salt
- 1 tsp. black pepper - We recommend Kampot if you know what is good for you!
- 2 tbsp. MarnaMaria Greek Seasoning or MarnaMaria Mediterranean Oregano
- 1-2 lbs chicken - use whatever you have! Tender, breasts, thigh, skin on or off, with or without bones
- 2 lbs potatoes, 1 in pieces or chunks - use whatever you have! Tiny red potatoes, white potatoes, or any potoates
- ½ cup feta cheese
- Serve with rice, orzo, or by itself!
Instructions
- Preheat oven to 350ºF.
- Combine the olive oil, lemon juice, chicken stock, garlic cloves, salt, pepper and MarnaMaria Greek Seasoning or MarnaMaria Mediterranean Oregano in a 9x13 baking dish.
- Add the chicken, potatoes, and feta. Stir to combine and coat. You can add a little bit more chicken broth if you need more liquid.
- Cover and bake for 45 minutes or until the chicken is just cooked through.
- Remove foil and broil for 5 minutes until the chicken, potatoes, and feta are golden brown.
Notes
Pro tip! Use the lemons that you squeezed and slice into rings. Add to baking dish with other ingredients add some more flavor and add to a beautiful presentation!
