Mana’esh Recipe with Halloumi

Ingredients

  • 1 cup lukewarm water
  • 1/2 tsp. sugar
  • 1 (1/4-oz. package) active dry yeast (about 2 1/4 teaspoons)
  • 3 cups flour, plus more for dusting
  • 1 tsp. salt
  • 5 tbsp. olive oil, divided, plus more for greasing
  • 4 tbsp. MarnaMaria Za’atar Spice
  • 2 cups shredded Halloumi cheese

Instructions

  1. Combine the water, sugar, and yeast, let stand for 10 minutes until foamy. Then combine the flour and salt in a large bowl. Add two tbsp. of olive oil and work it in with your fingers. Make a well in the center, add the yeast mixture, and stir to form a soft dough.
  2. Turn the dough out onto a floured surface and knead for 10 minutes until smooth and elastic. Form it into a ball and place it in an oiled bowl. Cover the bowl with a damp cloth and let rise in a warm place for about 1 hour until it doubles in size.
  3. Place a baking stone or baking sheet in the oven and preheat oven to 400°F.
  4. Divide dough into eight balls. Place the balls on a lightly oiled baking sheet, cover with a damp cloth or plastic wrap, and let stand for 15 minutes. Meanwhile, combine three tbsp. Za’atar and three tbsp. olive oil in a small bowl.
  5. On a lightly floured surface, flatten each ball of dough and roll it into a circle 1/8-inch thick and about 7 - 8 inches in diameter. Brush Za’atar slurry over each round, leaving a 1/2-inch border around the edges. Top generously with Halloumi cheese and sprinkle remaining Za’atar over the cheese.
  6. Bake until lightly browned and crisp, about 8 minutes.
