Florida Fish Escabeche Style

Description

So you can find endless varieties of fish just about anywhere across the globe, but one of our favorites are fish from the coast Florida. Our Florida Fish seasoning blend brings perfect pairing ingredients and freshness to these hearty, meaty and tasty ocean treats!


Ingredients

  • 6 fish fillets, preferably white
  • 1 tbsp. + 1/4 cup olive oil
  • 1 tbsp. fresh lemon juice
  • 2 tsp. MarnaMaria Florida Fish

Instructions

  1. Preheat grill or pan to medium high heat.
  2. Brush each fillet using the 1 tbsp. of olive oil and season lightly with salt and pepper.
  3. Place each fillet skin side down on the grill or pan and let cook for 5 - 7 minutes until the fillets are opaque and the fish removes easily from the grill grates or pan.
  4. Meanwhile, in a small bowl, combine the remaining 1/4 cup of olive oil, lemon juice and Florida Fish blend.
  5. After removing the fish from the heat, gently brush with the prepared marinade.
  6. Serve immediately.

Notes

This technique of cooking fish is called escabèche and is typically used in Southern France, Spain and Portugal. It is an herb and acid based marinade added after the fish is cooked. This brings big, clean flavors that have not been changed by cooking heat and also keeps the fish texture firm and crisp.
