Mediterranean Chicken Skewers with MarnaMaria Greek Seasoning
For everything that is good and holy, the kebab, gyro, donër, or whatever you call it, makes a killer meal. Yes, none of aforementioned are exactly, the same, they come from different countries, with different preparations, seasonings, and cooking styles. But the concept is delicious! A little bit of soft bread or pita, some incredible tender meat, a bit of veg, and some sort of tangy sauce bring it all together. It's hard to beat, and are so yummy, I once ate one and had to just have one more. Thank you Budapest.
So should you ever find yourself on a European street corner, in North Africa, down by the Bosphorus, or with the way the world lives these days, in New York City or Birmingham, Alabama, chances are, you can find yourself a version of this can't miss street food.
And while there is no competing to recreated street food flavors or atmosphere, there are recipes that come close.

This is a great recipe to bring to a party or potluck. These skewers are simple to make and are always a crowd pleaser. The lemon juice leaves the chicken tender and the skewers make them easy to eat. You absolutely must pair them with our recipe for Tzatziki, a recipe that was taught to me by a Greek woman north of Athens, and if you want to go really crazy, put out some fresh pita and a little bit of shredded red cabbage with a touch of vinegar.

Mediterranean Chicken Skewers

Description
Our recipe for Mediterranean Chicken Skewers with MarnaMaria Greek Seasoning is easy and awesome and does it's best to recreate the emotions I've at least had eating kebab, gyro, donër, or whatever you call it. We use Mediterranean Oregano that is full of clean and warm flavors.
Ingredients
- 2 lbs. boneless, skinless chicken breasts
- ½ cup plus 2 tbsp. olive oil, divided
- ¼ cup lemon juice
- ½ cup chicken stock
- 1 tsp. Kosher salt
- 1 tbsp. MarnaMaria Greek Seasoning
- 3 cloves garlic, minced
- Wooden skewers
Instructions
- Soak wooden skewers in water for at least one hour.
- In a medium sized bowl, whisk together ½ cup olive oil, lemon juice, chicken stock, salt, MarnaMaria Greek Seasoning and garlic.
- Using a sharp knife, cut the chicken into one inch cubes and add to Greek Seasoning marinade.
- Let marinate for at least 30 minutes and up to four hours. (Be careful not to over marinate or the chicken will disintegrate from the lemon juice.)
- Skewer the chicken piece, we recommend putting three to four pieces on each skewer.
- Heat 2 tbsp. of olive oil in a large, flat pan or grill pan, over medium high heat.
- Cook chicken, four minutes per side, until cooked through. (You can also sear the chicken over high and then place in a 375ºF oven for 15 minutes until fully cooked.)
- Serve with our secret tzatziki recipe.
Notes
These chicken skewers are the perfect base for your favorite chicken pita or doner kebab. In a fresh pita, add tzatziki, chicken, and top with red cabbage, tomatoes, lettuce, white onion, or whatever topping you enjoy.
