Description
This is a great 5 o'clock drink and if you are feeling really ambitious, it could be lovely for brunch too! Similar to a French 75, this twist with rum, honey, and lime, topped with champagne is never a bad idea.
Ingredients

- 1 ½ oz gold rum
- ½ oz fresh lime juice
- ½ oz honey syrup (recipe follows)
- Ice
- Champagne or prosecco
- Mint leaves to garnish
Instructions
- For the honey syrup, bring two parts honey and one part water to a simmer in a small sauce pan until combined. Let cool.
- In a cocktail shaker, combine rum, lime juice, honey syrup, and ice.
- Shake until chilled.
- Strain into a Collins glass filled with ice.
- Top with champagne or prosecco.
- Garnish with mint leaves.
