Description

Chicken Rub seems like a pretty standard blend. But our MarnaMaria Chicken Rub is different. It has character and uses two ingredients which go incredible with chicken that you probably don't use too often; paprika and tarragon!


Ingredients

  • 2 lbs Bone In Chicken Thighs (we like dark meat but feel free to use whatever you like!)
  • 2-3 tbsp. MarnaMaria Chicken Rub
  • 2 tbsp. Olive Oil + extra if you marinating ahead of time.

Instructions

  1. If marinating chicken ahead of time, combine chicken, Chicken Rub, and 2 tbsp. of olive oil in a plastic bag. Let marinate in the refrigerator for at least 30 minutes or up to 24 hours. If cooking right away, dry the chicken with paper towels and generously season with Chicken Rub.
  2. When ready to cook, heat a grill pan or oven proof skillet (cast iron works great) over high heat and preheat your oven to 400ºF.
  3. When pan is hot, add 2 tbsp. olive oil to the pan and allow to heat for a second.
  4. Place chicken in skillet, skin side down, and sear chicken until crisp and charred, about 3 minutes. Reduce heat to medium and let cook for 5 minutes longer. 
  5. Flip chicken and let cook for five more minutes. Then transfer the pan to the oven for the chicken to finish cooking. (If your pan is not oven safe, transfer your chicken to a prepared baking sheet.)
  6. Let chicken finish cooking in the oven for about 15 minutes or until cooked through and has reached an internal temperature of 160ºF* - 165ºF.

Notes

*The recommended cooking temperature for chicken is 165ºF. If you pull your chicken from the oven at 160ºF, it will continue to cook a bit, eventually hitting that 165ºF without extra help from the oven. This will help keep your meat moist. But please, feel free to wait until 165ºF if you feel more comfortable!

This blend works great for grilling out in the summer, simply heat your grill to 400ºF and cook until you reach an internal temp of 160ºF or 165ºF as mentioned above.
