- 1 cup whole milk or coconut milk
- 1 tsp. apple cider vinegar
- 1 tsp. MarnaMaria Garam Masala plus extra for decorating
- ½ cup butter, softened
- ¾ cup granulated sugar
- 1 tbsp. vanilla extract
- 1 egg
- 1 ¼ cup all-purpose flour
- 2 tbsp. corn starch
- ½ tsp. baking soda
- ¾ tsp. baking powder
- ¼ tsp salt
- Cream Cheese Frosting
Instructions
- Preheat the oven to 350ºF.
- In a small bowl, combine the coconut milk, apple cider vinegar, and Garam Masala.
- In the bowl of stand mixture (you can also use a hand mixer), cream together the butter and sugar until fluffy and light in color. About 5 minutes.
- Stir in the vanilla.
- Meanwhile, in a medium bowl, sift together the flour, corn starch, baking soda, baking powder, and salt.
- Working in batches, with the mixer running, add ⅓ of the flour mixture to the creamed sugar and butter. Then add ⅓ of the milk mixture. Continue alternating flour and milk, finishing with the milk. Mix until just combined.The batter will be very thick.
- Scoop batter into a prepared cupcake pan, filling about ⅔ the way full.
- Bake cupcakes for 25 minutes or until a toothpick comes out clean.
- When cool, frost cupcakes and sprinkle with a bit more Garam Masala for a beautiful finished product with some extra spice!
