    Spanish French Toast

    Spanish Torrijas

    Cinnamon has a million uses, so how about this new twist on French Toast. The bread is lightly fried in olive oil and then topped with cinnamon sugar, much like a churro!

    My husband loves olive oil. He loves it! We got through an insane amount of olive oil for two people. After we got married, I mentioned to Sean that in Spain, the tend to fry in olive oil what we would normally fry in canola or vegetable oil. Churros, fish, things like that. He was interested.

    Sean is a great cook, he truly can cook, but often times he has no time. Once, he promised all week to cook me dinner, and then on Friday night at 10pm, he made me frozen Ling Ling potstickers. Which I really like, just wasn't exactly what I think either of us had in mind. He's made the best French Onion Soup I've ever tasted (and I lived in France!), and his grilling skills are better than anyone I know, including restaurants. So one morning, we'd been married for two months, Sean decided to make me breakfast.

    He researched, found this incredible recipe online, and was secretly in the kitchen cooking something. I sat down at the table and he put this beautiful steaming plate of deliciousness in front of me. I said, "Torrijas! My favorite!" To which he replied, disappointment, "You know what this is!"

    His torrijas were incredible, better than any I've ever made. Crispy on the outside, soft on the inside. And since that time, when Sean says he's making torrijas, everyone jumps for some.

    And here's the pro tip, when youre done making the torrijas, place them in a warm oven and keep your oil hot over medium high heat. Crack in an egg for each person, voila! The most delicious fried sunny side up eggs ever!

    Cinnamon has a million uses, so how about this new twist on French Toast. The bread is lightly fried in olive oil and then topped with cinnamon sugar, much like a churro!


    Ingredients

    Scale
    • 1 baguette, brioche, or firm bread
    • 3 cups of milk
    • 1 cup of sugar, divided
    • 2 ½ tsp. ground MarnaMaria Ceylon Cinnamon, divided
    • 2 eggs
    • 2 tbsp. olive oil
    • Powdered sugar and fresh fruit to finish

    Instructions

    1. Cut the bread into slices, about 2.5 inches think.
    2. In a saucepan over medium heat, bring the milk to a boil. Add ½ tsp. cinnamon and ½ cup of sugar to the milk and stir. Lower the heat to low and let simmer for 10 minutes to allow the flavors to combine.
    3. Remove from heat, and allow the milk mixture to cool to room temperature, about 10 minutes.
    4. In a bowl. stir the eggs with a fork. In a separate bowl, combine the remaining cinnamon and suger and stir until blended.
    5. Set a pan over medium heat and add 1 tbsp. of olive oil.
    6. Take each slice of bread and dip first in the milk mixture, then the egg mixture and then place in the pan to cook. Cooked until browned, about 2 minutes per side.
    7. When ready, remove the bread from the pan and place on a paper towel to absorb excess oil. Finally, sprinkle the hot torrijas with the cinnamon sugar mixture. Repeat for all the slices of bread, adding more olive oil to the pan as needed.
    8. Sprinkle with powdered sugar and top with fresh fruit.

    Notes

    Traditionally, Torrijas can be served with several different toppings. We suggest melted chocolate, honey, cream cheese, or maple syrup, but for those feeling truly creative, a red wine reduction makes for a special treat.
