Greek Chicken with Lemon, Feta & Potatoes

Description

There is no way to mess this recipe up. Add more of what you love and less of what you don't. Can be made ahead a reheated with no problems. A great dish to enjoy with your family or to give away to a friend!


Ingredients

  • 1 cup olive oil
  • 1/2 cup lemon juice from fresh lemons if possible
  • 1 cup chicken stock
  • 3 garlic cloves, smashed
  • 2 tbsp. Kosher salt
  • 1 tsp. black pepper - We recommend Kampot if you know what is good for you!
  • 2 tbsp. MarnaMaria Greek Seasoning or MarnaMaria Mediterranean Oregano
  • 1-2 lbs chicken - use whatever you have! Tender, breasts, thigh, skin on or off, with or without bones
  • 2 lbs potatoes, 1 in pieces or chunks - use whatever you have! Tiny red potatoes, white potatoes, or any potoates
  • 1/2 cup feta cheese
  • Serve with rice, orzo, or by itself!

Instructions

  1. Preheat oven to 350ºF.
  2. Combine the olive oil, lemon juice, chicken stock, garlic cloves, salt, pepper and MarnaMaria Greek Seasoning or MarnaMaria Mediterranean Oregano in a 9x13 baking dish.
  3. Add the chicken, potatoes, and feta. Stir to combine and coat. You can add a little bit more chicken broth if you need more liquid.
  4. Cover and bake for 45 minutes or until the chicken is just cooked through.
  5. Remove foil and broil for 5 minutes until the chicken, potatoes, and feta are golden brown.

Notes

Pro tip! Use the lemons that you squeezed and slice into rings. Add to baking dish with other ingredients add some more flavor and add to a beautiful presentation!
